Zucchini Patties

Instructions

🥒 1. Prepare the Zucchini

  • Wash and trim the zucchinis, then grate them using a large-hole grater.

  • Place the grated zucchini in a colander with a pinch of salt. Let it sit for 10–15 minutes to release excess water.

  • Squeeze them well using your hands or a clean kitchen towel.

🥣 2. Make the Mixture

  • In a large bowl, combine the drained zucchini, eggs, breadcrumbs, grated Parmesan, minced garlic (if using), parsley, salt, and pepper.

  • Mix well until you get a compact, moldable mixture.

  • If the mix feels too soft, add a little more breadcrumbs.

🧆 3. Form the Patties

  • Take a small portion of the mixture and shape it into round balls or slightly flattened patties — your choice!

🍳 4. Cook the Patties

Option 1: Pan-Frying

  • Heat a generous amount of olive oil in a pan.

  • Fry the zucchini patties until golden and crispy, flipping to cook both sides evenly.

  • Drain on paper towels.

Option 2: Baking

  • Place the patties on a baking sheet lined with parchment paper.

  • Brush lightly with olive oil.

  • Bake in a preheated oven at 180°C (350°F) for about 20–25 minutes, flipping halfway through for even browning.

🍽️ 5. To Serve

Serve the zucchini patties warm or at room temperature, paired with:

  • A yogurt-based dip

  • Mayonnaise

  • Or a fresh side salad 🥗

Tip: These are great for appetizers, lunchboxes, or light dinners — and they freeze well, too!
