🥒 1. Prepare the Zucchini

Wash and trim the zucchinis, then grate them using a large-hole grater.

Place the grated zucchini in a colander with a pinch of salt. Let it sit for 10–15 minutes to release excess water.

Squeeze them well using your hands or a clean kitchen towel.
🥣 2. Make the Mixture

In a large bowl, combine the drained zucchini, eggs, breadcrumbs, grated Parmesan, minced garlic (if using), parsley, salt, and pepper.

Mix well until you get a compact, moldable mixture.

If the mix feels too soft, add a little more breadcrumbs.
🧆 3. Form the Patties

Take a small portion of the mixture and shape it into round balls or slightly flattened patties — your choice!
🍳 4. Cook the Patties
Option 1: Pan-Frying

Heat a generous amount of olive oil in a pan.

Fry the zucchini patties until golden and crispy, flipping to cook both sides evenly.

Drain on paper towels.
Option 2: Baking

Place the patties on a baking sheet lined with parchment paper.

Brush lightly with olive oil.

Bake in a preheated oven at 180°C (350°F) for about 20–25 minutes, flipping halfway through for even browning.
🍽️ 5. To Serve
Serve the zucchini patties warm or at room temperature, paired with:

A yogurt-based dip

Or a fresh side salad 🥗
