Instructions:

Wash and grate the zucchini using a coarse grater.

Squeeze them well with your hands or a clean kitchen towel to remove excess water.

Place the zucchini in a bowl and add the eggs, cheese, breadcrumbs, garlic (if using), parsley, salt, and pepper.

Mix until you get a soft but compact mixture. If it’s too wet, add a little more breadcrumbs.

With slightly oiled hands, shape the mixture into small patties and coat them lightly in breadcrumbs for a crispy crust.

Oven method: Place the patties on a baking tray lined with parchment paper, brush with a little olive oil, and bake at 200°C (400°F) for 20–25 minutes, turning them halfway through.

Pan-fry method: Alternatively, cook them in a skillet with a bit of hot olive oil, browning evenly on all sides.
