Instructions:

  1. First, grate the lemon zest and squeeze out the juice.

  2. Beat the butter (or margarine), sugar, vanilla sugar, and eggs until light and creamy.

  3. Mix in the lemon zest, juice, and quark.

  4. Add 375 g of flour and the baking powder and combine well.

  5. Wash and dry the raisins, then toss them in the remaining flour. Gently fold them into the batter.

  6. Grease a 30 cm loaf pan (or line with baking paper) and pour in the batter.

  7. Bake in a preheated oven at 170°C (fan-assisted) for about 1 hour.
