We eat this 3 times a week – Paprika Zucchini Cream Chicken

Instructions:

  1. Prepare the chicken:
    Rinse the chicken breast fillets and pat them dry with a paper towel. Season with salt, pepper, and paprika powder.

  2. Sear the chicken:
    Heat the olive oil in a large pan over medium heat. Sear the chicken breasts on both sides until golden brown (approx. 5–7 minutes per side), until fully cooked. Remove the chicken from the pan and set aside.

  3. Cook the vegetables & base of the sauce:
    In the same pan, sauté the diced onion and garlic until soft and fragrant (approx. 2–3 minutes).
    Add the bell pepper strips and zucchini slices. Stir-fry everything for about 5 minutes until the vegetables soften.

  4. Make the cream sauce:
    Pour the cream into the pan and add the thyme. Season with salt and pepper. If you like a slightly sweet touch, stir in 1 tsp of honey. Let the sauce simmer for 5–7 minutes until it slightly thickens.

  5. Combine chicken and vegetables:
    Return the chicken breasts to the pan and mix everything well. Let the chicken simmer in the sauce for 2–3 minutes to absorb the flavors. Taste and adjust seasoning if necessary.

  6. Serve:
    Plate the paprika-zucchini-cream chicken and garnish with fresh parsley or basil as desired.
