Knead the dough for 10 minutes until elastic.

Cover with a towel and let rise in a warm place for 1.5 hours.

Shape into a round loaf, sprinkle with seeds, and let rise another 30 minutes.

Preheat the oven to 220°C (428°F) and bake for 40 minutes. (Place a bowl of water on the lowest oven rack for steam.)
