Viral Christmas Peach Cobbler Cheesecake

Ingredients

For the Crust

  • 2 cups crushed graham crackers or vanilla biscuits
  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • ½ tsp cinnamon

For the Cheesecake Filling

  • 900 g (32 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 2 tbsp all-purpose flour or cornstarch
  • ¼ tsp salt

For the Peach Cobbler Topping

  • 4 cups sliced peaches (fresh or canned, well drained)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • ¼ cup water
  • 2 tbsp butter

Optional Cobbler Crumble (Highly Recommended)

  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup cold butter, cubed
  • ¼ tsp cinnamon
