Ingredients
For the Crust
- 2 cups crushed graham crackers or vanilla biscuits
- ½ cup unsalted butter, melted
- 2 tbsp granulated sugar
- ½ tsp cinnamon
For the Cheesecake Filling
- 900 g (32 oz) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 1 cup sour cream
- 2 tsp vanilla extract
- 2 tbsp all-purpose flour or cornstarch
- ¼ tsp salt
For the Peach Cobbler Topping
- 4 cups sliced peaches (fresh or canned, well drained)
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- ¼ cup water
- 2 tbsp butter
Optional Cobbler Crumble (Highly Recommended)
- ½ cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup cold butter, cubed
- ¼ tsp cinnamon
