Tuscan Salmon in Cream Sauce with Sun-Dried Tomatoes

Ingredients

  • Salmon fillets: ~600–800 g (cut into 4–6 pieces)

  • Baby spinach: 70 g

  • Sun-dried tomatoes in oil: ½ cup (finely chopped)

  • Light cream: 250 ml

  • Finely grated Parmesan cheese: ½ cup (or another hard cheese)

  • Garlic: 3 cloves (minced)

  • Fresh dill: 2 tbsp (or 1 tsp dried dill)

  • Paprika powder: ⅓ tsp

  • Lemon juice: to taste

  • Oil: for frying

  • Butter: for frying

  • Salt: to taste

  • Black pepper: to taste
