Turkey Goulash with Bell Peppers and Zucchini

Instructions:

 

1. Sear the turkey:
Heat a bit of oil in a large pan and sear the turkey cubes until golden brown on all sides. Remove from the pan and set aside.

2. Cook onions and garlic:
In the same pan, sauté the chopped onions and garlic over medium heat until translucent and slightly browned.

3. Add vegetables:
Add the bell pepper strips and zucchini cubes to the pan and sauté for about 5 minutes, until they begin to soften.

4. Season and deglaze:
Stir in the tomato paste and paprika powder. Season with salt and pepper. Pour in the vegetable broth and mix everything well.

5. Simmer:
Return the turkey to the pan. Let everything simmer over medium heat for 15–20 minutes, until the meat is tender and the vegetables are fully cooked. Stir occasionally to prevent sticking.

6. Serve:
Serve the turkey goulash hot – it goes perfectly with rice, pasta, or fresh crusty bread.
