Directions:
1. Preheat oven to 170°C fan forced.
2. Heat olive oil in a frying pan over medium heat.
3. Cook onion until softened.
4. In a saucepan melt butter over medium heat.
5. Stir in plain flour and cook for 1 minute.
6. Gradually whisk in milk until smooth.
7. Simmer for 3 to 4 minutes until thickened.
8. Stir in grated cheese, salt, and pepper until melted.
9. In a large bowl combine cooked rice, tuna, peas, and onion.
10. Pour mornay sauce over and mix well.
11. Transfer to a baking dish.
12. Sprinkle extra cheese and breadcrumbs on top.
13. Bake for 20 to 25 minutes until golden and bubbling.
