Directions

1. In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy and smooth, about 2 minutes.
2. Gradually add the powdered sugar, one cup at a time, beating on low speed until fully incorporated after each addition.
3. Add the vanilla extract and a pinch of salt, and mix to combine.
4. Slowly add 2 tablespoons of heavy cream and continue to beat on medium-high speed for 3-4 minutes, until the frosting is light and fluffy. If the frosting is too thick, add an additional tablespoon of cream.
5. Use immediately to frost cakes, cupcakes, or other desserts, or store in an airtight container in the refrigerator for up to 1 week. Before using, bring the frosting to room temperature and beat again until smooth.

Variations & Tips

For a chocolate version, add 1/2 cup of unsweetened cocoa powder to the frosting along with the powdered sugar. For a more intense vanilla flavor, consider using vanilla bean paste or adding the seeds of one vanilla bean. To infuse a bit of citrus, add a teaspoon of lemon or orange zest. If you’re looking for a dairy-free option, substitute the butter with a vegan butter substitute and use almond milk in place of heavy cream.
