This broccoli recipe changed everything for me!

Ingredients

For the vegetables:

  • 1 large head of broccoli (about 600 g)

  • 500 g potatoes, preferably medium-sized

  • 1 large red onion

  • 4 white mushrooms (or other white mushrooms)

  • 2 bay leaves

  • 1 tsp whole black peppercorns

  • Salt for seasoning

  • 3 tbsp olive oil, divided

For the creamy cheese sauce:

  • 2 tbsp butter (30 g)

  • 2 tbsp wheat flour (30 g)

  • 500 ml whole milk (room temperature)

  • 150 g grated cheese (e.g., Gouda, Cheddar, or Gruyère)

  • ½ tsp ground nutmeg

  • Salt and pepper to taste

  • Cheese grater

For assembling:

  • Some olive oil for greasing

  • Some extra grated cheese for topping
