These are so good, I’ve had them everyday this week so far

 

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Grease a muffin tin with olive oil or non-stick cooking spray.
  2. Prepare the Ham Cups:
    • Lay one slice of ham in each muffin tin cup, pressing gently to create a cup shape.
  3. Add Cheese and Eggs:
    • Sprinkle a small amount of shredded cheese into the bottom of each ham cup.
    • Crack one egg into each ham cup, being careful not to break the yolk.
    • Season with salt and pepper to taste.
  4. Bake the Breakfast Cups:
    • Place the muffin tin in the preheated oven.
    • Bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
  5. Garnish and Serve:
    • Remove the breakfast cups from the oven and let them cool for a few minutes.
    • Garnish each cup with a sprinkle of chopped fresh parsley for added flavor and color.
    • Serve the breakfast cups hot and enjoy!
