These are delicious! The best thing? You can enjoy them without any guilt!
Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.
Break the cauliflower into florets and pulse in a food processor until it resembles fine crumbs.
Transfer the cauliflower crumbs to a microwave-safe bowl and microwave for about 8 minutes or until softened.
Once cooled slightly, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
In a large bowl, combine the cauliflower, cheddar cheese, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Spread the mixture evenly onto the prepared baking tray, shaping it into a rectangle about 1/2 inch thick.
Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
Remove from the oven, sprinkle with chopped parsley, and let it cool slightly before cutting into squares.
Variations & Tips
For a spicier kick, add a pinch of red pepper flakes to the mixture. You can also experiment with different types of cheese, such as mozzarella or a blend of Italian cheeses. If you have picky eaters, try adding a bit of cooked bacon or ham to the mix for extra flavor. To make it dairy-free, use a plant-based cheese alternative.
