The moment I discovered this recipe, I had a feeling it would be amazing. And wow, it truly was! So delicious!

Instructions:

  1. Preheat Oven & Prep Tray: Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Set Up Breading Stations:
    • In a shallow dish, combine the all-purpose flour with a pinch of salt and pepper.
    • In a second shallow dish, beat the 2 large eggs until smooth.
    • In a third shallow dish, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, and a pinch of salt and pepper.
  3. Bread Chicken: Take each chicken fillet and first dip it into the flour mixture, shaking off any excess. Next, dip it into the beaten eggs, ensuring it’s fully coated. Finally, place it into the breadcrumb mixture, pressing gently to ensure an even and firm coating on all sides.
  4. Bake: Place the breaded fillets on the prepared baking tray. Drizzle the olive oil evenly over the top of the breaded chicken. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the coating is golden brown and crispy.
  5. Rest & Serve: Remove the chicken from the oven and let it rest for a few minutes before serving.
