Instructions:
1. Preparation: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. This prevents sticking and makes cleanup a breeze.
2. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, 1/3 cup sugar, baking powder, 1/2 teaspoon cinnamon, and salt. This ensures the leavening and spices are evenly distributed throughout the batter.
3. Combine Wet Ingredients: In a separate medium bowl, whisk the egg, then add the milk and vanilla extract. Whisk until the mixture is smooth and well-combined.
4. Create the Batter: Pour the wet ingredients into the dry ingredients. Using a spatula, gently fold the mixture together until just combined. Do not overmix; a few lumps are perfectly fine. Overmixing will lead to tough fritters.
5. Fold in the Apples: Gently fold the chopped apples into the batter until they are evenly distributed.
6. Form and Bake: Using two spoons or a medium cookie scoop, drop mounds of the batter (about 1/4 cup each) onto the prepared baking sheet, spacing them about 2 inches apart. They will not spread much.
7. Bake to Perfection: Bake for 12-15 minutes, or until the fritters are puffed up and the tops are golden brown and spring back when lightly touched.
8. Final Touches (Cinnamon-Sugar): While the fritters are baking, mix the 1/4 cup sugar and 1 teaspoon cinnamon in a small bowl. As soon as the fritters come out of the oven, brush the tops with melted butter and then dredge them in the cinnamon-sugar mixture to coat.
9. Final Touches (Vanilla Glaze): If using the glaze, whisk the powdered sugar, 2 tablespoons of milk, and vanilla in a bowl until smooth. Add more milk, a teaspoon at a time, until it reaches a drizzle-able consistency. Drizzle over the warm fritters.
