Follow these simple steps to create your tender Southern smothered pork chops:

1. In a shallow dish, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Dredge each pork chop in the seasoned flour, shaking off any excess.

2. In a large skillet, heat the vegetable oil over medium-high heat. Add the pork chops and cook until browned on both sides, about 3-4 minutes per side. Remove the pork chops from the skillet and set aside.

3. In the same skillet, add the sliced onions and minced garlic. Cook until the onions are softened and translucent, about 5 minutes.

4. Reduce the heat to medium and sprinkle some of the seasoned flour over the onions and garlic. Stir well to coat the onions and cook for an additional minute.

5. Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook for 2-3 minutes, or until the gravy has thickened.

6. Return the pork chops to the skillet, nestling them into the gravy. Cover the skillet and reduce the heat to low. Allow the pork chops to simmer in the gravy for 1 hour, or until they are tender and cooked through.

7. Remove the pork chops from the gravy and set aside. Stir in the milk to the gravy and cook for an additional 2-3 minutes, or until the gravy has thickened to your desired consistency.

8. Serve the smothered pork chops hot, drizzled with the creamy gravy. Garnish with fresh parsley, if desired.
