Sweet Potatoes in the Microwave

Directions

  1. Wash the sweet potatoes thoroughly under running water to remove any dirt or debris.
  2. Using a fork, pierce the sweet potatoes in several places to allow steam to escape during cooking.
  3. Rub the sweet potatoes with olive oil and season with salt and pepper.
  4. Place the sweet potatoes on a microwave-safe plate and cook on high for 5-7 minutes per potato, depending on its size.
  5. Carefully remove the sweet potatoes from the microwave and let them rest for a few minutes before serving.
  6. To check if the sweet potatoes are cooked through, insert a knife or fork into the center – it should go in easily.
