Instructions:
- Cook the Sausage: Heat olive oil in a large skillet over medium heat. Crumble sausage or chorizo and cook until browned and cooked through (about 7-8 minutes). Remove and set aside.
- Sauté the Vegetables: In the same skillet, add onion and jalapeño. Sauté until onion is soft and translucent. Stir in garlic and cook for an additional minute.
- Add Tomatoes and Cheese: Add diced tomatoes and green chilies to the skillet. Lower heat and add Velveeta and pepper jack cheese. Stir constantly as cheese melts.
- Adjust the Consistency: If too thick, gradually stir in milk or heavy cream. Add smoked paprika, cayenne pepper (if using), and salt and pepper to taste.
- Combine with the Sausage: Stir cooked sausage back into the cheese mixture. Let simmer for a couple of minutes.
- Serve and Garnish: Transfer dip to a serving bowl. Garnish with fresh cilantro. Serve warm with tortilla chips.
