1. Make the Marinade
In a medium bowl, whisk together avocado oil, orange juice, agave syrup, orange zest, green olives, mint, smoked paprika, black pepper, and cumin until well combined.
2. Prepare the Feta
Pat the feta dry with a paper towel. Cut into small, bite-sized cubes.
3. Marinate
Spread a few spoonfuls of marinade on the bottom of a shallow dish. Place the feta cubes on top, then pour the rest of the marinade over them to coat evenly.
4. Chill
Cover and refrigerate for at least 2 hours. For deeper flavor, marinate for 4+ hours, stirring occasionally to recoat the cubes.
5. Serve
Bring the feta to room temperature before serving to fully release its flavor.
