Spaghetti with Creamy Roasted Pepper Sauce, Chorizo, and Shrimp

Ingredients

  • 320 g (11 oz) spaghetti or linguine for a variation

  • 200 g (7 oz) raw shrimp, peeled (keep the tails on for presentation)

  • 100 g (3.5 oz) mild or spicy chorizo, sliced or diced

  • 2 ripe red bell peppers (the riper, the sweeter)

  • 1 medium onion, finely sliced

  • 2 garlic cloves, minced

  • 200 ml (about ¾ cup) thick crème fraîche or heavy cream

  • 2 tablespoons olive oil

  • 1 teaspoon sweet or smoked paprika, for a deeper flavor

  • A pinch of dried thyme or 1 sprig of fresh thyme

  • Salt and freshly ground black pepper, to taste
