Wash okra and trim only the very tips, keeping pods whole.
Pack okra tightly into clean jars, adding garlic cloves and hot peppers if desired.
In a saucepan, bring vinegar, water, salt, sugar, mustard seeds, dill seeds, peppercorns, and crushed red pepper to a boil.
Pour the hot brine over the okra, making sure everything is submerged.
Seal jars and let cool on the counter.
Refrigerate at least 48 hours before eating for best flavor.
