Directions:
1. Preheat the oven to 350°F (175°C).
2. Arrange the sweet potato slices evenly in a 9×13-inch baking dish.
3. In a saucepan over medium heat, melt the butter.
4. Add the granulated sugar, brown sugar, and water to the melted butter. Stir continuously until the sugars dissolve and the mixture becomes syrupy, about 5-7 minutes.
5. Remove from heat and stir in the ground cinnamon, nutmeg, vanilla extract, and a pinch of salt.
6. Pour the syrup evenly over the sweet potatoes, making sure they are well coated.
7. Cover the baking dish with aluminum foil and bake for 30 minutes.
8. Remove the foil and continue baking for an additional 20-25 minutes, basting occasionally with the syrup, until the sweet potatoes are tender and the syrup is bubbly and caramelized.
9. Let cool slightly before serving to allow the syrup to thicken.
