South African buttermilk rusk – Homemade Rusks

Method:

  1. Preheat the oven to 180°C / Gas 4.

  2. Mix together the vinegar, milk, and eggs. Add the melted butter and stir well.

  3. In a large mixing bowl, combine the flour, sugar, and salt.

  4. Pour the butter mixture into the dry ingredients and mix until a dough forms.

  5. Line a baking tin with baking paper.

  6. Spoon the dough into the tin, smooth the top, and mark into fingers with your fingers or a knife.

  7. Bake for 45 minutes, or until cooked through.

  8. Let the rusks cool slightly in the tin, then turn out and break along the marked lines.

  9. Place the pieces on baking trays and dry out at 90°C for 4 to 5 hours, leaving the oven slightly open.
