Preheat the oven to 180°C (350°F).

In a large bowl, pour in the yogurt. Keep the yogurt cup to use as a measuring tool.

Add the eggs and sugar. Whisk until the mixture becomes pale and slightly frothy.

Stir in the oil, then add the flour, baking powder, lemon zest, and lemon juice. Mix until smooth.

Pour the batter into a greased or parchment-lined baking pan.

Bake for about 35–40 minutes, or until a knife inserted into the center comes out clean.

Let cool slightly before removing from the pan.

If you’d like a sweet, crisp topping, sprinkle some sugar on top while the cake is still warm.
