Prepare the filling:
Grate the apples and cook them in a saucepan with a little sugar over low heat until they start to release juice.
Add the chopped walnuts and cinnamon, mix well, and let the filling cool completely. -
Make the dough:
In a large bowl, beat the butter and powdered sugar until creamy and smooth.
Add the egg and vinegar while continuing to mix.
Gradually add the flour, baking powder, and vanilla sugar, mixing until you get a soft and elastic dough. -
Shape the cookies:
Divide the dough into three equal parts.
Roll out one portion between two sheets of parchment paper into a thin circle.
Use a pot lid or large plate to cut out a round shape.
Cut the circle into 8 equal triangles (like slicing a pizza).
Place a teaspoon of the apple filling at the wide end of each triangle.
Roll each triangle from the wide end to the tip, forming crescent-shaped cookies. -
Bake:
Place the cookies on a baking sheet lined with parchment paper.
Bake in a preheated oven at 180°C (350°F) for about 20–25 minutes, or until golden. -
Serve:
Let the cookies cool completely, then generously dust with powdered sugar.
