Slow Cooker Taco Rice Soup

Preparation

  1. In a skillet over medium-high heat, brown the ground beef, breaking it apart as it cooks, until no longer pink. Season with taco seasoning and let cook 1-2 minutes.
  2. Transfer beef to a slow cooker, then stir in onion, garlic, fire roasted tomatoes, chili beans, black beans, tomato sauce, and beef broth.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours.
  4. When cooking time is done, stir rice into soup, season to taste with salt and pepper, and cover once more to allow rice to warm through, about 5 minutes.
  5. Top with your favorite toppings and enjoy!
