Shrimp Alfredo Lasagna

Instructions:

 

1. Prepare the Alfredo Sauce:
– In a medium saucepan, melt the butter over medium heat.
– Add minced garlic and sauté for about 1 minute until fragrant.
– Pour in the heavy cream and bring to a simmer, stirring constantly.
– Gradually add the Parmesan cheese, whisking until the cheese is melted and the sauce is smooth.
– Season with salt, pepper, and nutmeg if using. Remove from heat and set aside.

2. Cook the Shrimp:
– Season the shrimp with salt and pepper.
– In a large skillet, heat olive oil over medium heat.
– Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.

3. Cook the Lasagna Noodles:
– Cook the lasagna noodles according to the package instructions. Drain and set aside.

4. Prepare the Ricotta Mixture:
– In a medium bowl, combine ricotta cheese, egg, salt, and pepper. Mix until smooth.

5. Assemble the Lasagna:
– Preheat your oven to 350°F (175°C).
– In a large baking dish, spread a thin layer of Alfredo sauce on the bottom.
– Place a layer of lasagna noodles on top of the sauce.
– Spread a layer of the ricotta mixture over the noodles.
– Add a layer of cooked shrimp.
– Pour a generous amount of Alfredo sauce over the shrimp.
– Sprinkle with mozzarella and Parmesan cheese.
– Repeat the layers until all the ingredients are used, finishing with a layer of sauce and a sprinkle of mozzarella and Parmesan on top.

6. Bake the Lasagna:
– Cover the lasagna with aluminum foil and bake for 25 minutes.
– Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

7. Garnish and Serve:
– Remove the lasagna from the oven and let it sit for about 10 minutes before serving.
– Garnish with chopped fresh parsley.
