Russian Syrniki (Cottage Cheese Pancakes)

Instructions

  1. I placed the cottage cheese in a bowl and pressed it through a fine sieve to make it completely smooth and fluffy. I then added the sugar, salt, and eggs, and mixed everything thoroughly until I had a uniform mixture.

  2. Only then did I mix in the flour and stirred until the dough was soft, but not too firm.

  3. With wet hands, I shaped the dough into balls about the size of a walnut. I rolled them in flour and gently flattened them into neat patties – not too thin.

  4. I heated a frying pan over medium heat, added a splash of oil, and placed the syrniki in the pan. I fried them slowly until the bottoms turned golden brown, then carefully flipped them to cook the other side.

  5. Once cooked, I placed the syrniki on a paper towel to absorb any excess oil.

  6. I served them warm, topped with sour cream and homemade raspberry jam.

  7. These syrniki simply melt in your mouth and make you want more every time!
