Rolled Cookies – Light and Elastic Ricotta Dough

Instructions:

  1. In a bowl, mix the eggs with the softened butter until well combined.

  2. Gradually add the sugar, ricotta, grated orange zest, and flour, mixing continuously.

  3. Add the salt and baking powder, and knead until you get a soft, smooth dough.

  4. Roll out the dough with a rolling pin and cut it into a large rectangle.

  5. Spread the jam over the surface and roll up the dough starting from the longer side.

  6. Seal the edges and cut the roll into small swirls or pinwheels.

  7. Bake at 180°C (350°F) for about 25 minutes, or until lightly golden.

  8. Let cool and dust with powdered sugar before serving.
