Preheat your oven to 400°F (200°C).
In a large bowl, combine the shredded chicken or beef with the cheese, cumin, garlic powder, onion powder, salt, and pepper. Mix well.
Warm the tortillas slightly in the microwave to make them more pliable.
Place about 2 tablespoons of the filling on one side of each tortilla, then roll them tightly.
Place the rolled tortillas seam-side down in a glass baking dish, making sure they are tightly packed.
Brush the tops of the taquitos with olive oil to help them brown.
Bake in the preheated oven for 15-20 minutes, or until the tortillas are lightly browned and crispy.
Remove from the oven and let them cool slightly before serving.
