Brown beef in a skillet; drain fat.

Add peppers, onion, and seasonings; sauté 3–4 minutes.

Stir in rice, broth, and diced tomatoes.

Transfer to a baking dish, cover with foil, and bake at 375°F (190°C) for 30–35 minutes until rice is tender.

Uncover, top with cheese, and bake 5–10 minutes more until melted.
