Quick Ground Beef & Pepper Rice Casserole

Instructions

  • Brown beef in a skillet; drain fat.
  • Add peppers, onion, and seasonings; sauté 3–4 minutes.
  • Stir in ricebroth, and diced tomatoes.
  • Transfer to a baking dish, cover with foil, and bake at 375°F (190°C) for 30–35 minutes until rice is tender.
  • Uncover, top with cheese, and bake 5–10 minutes more until melted.
  • Rest 5 minutes and serve.
