Pure Delight – Plum Rolls with Fruity Filling

Preparation:

  1. Make the dough:
    Stir together the milk, 1 tbsp sugar, and yeast until smooth. In a mixing bowl, combine the flour, remaining sugar, melted butter, and egg yolk. Pour in the yeast mixture and knead everything into a smooth dough using the dough hooks of a hand mixer. Cover and let rise in a warm place for about 45 minutes.

  2. Prepare the filling:
    Wash, halve, pit, and finely chop the plums. Heat 3 tbsp water in a pan and cook the plums over medium heat until most of the liquid has evaporated. Mix the cornstarch with a little cold water, stir it into the plums, and briefly bring to a boil. Sweeten with 2 tbsp sugar and let cool.

  3. Assemble the rolls:
    Knead the dough again on a lightly floured surface and roll it out into a rectangle (approx. 20 x 30 cm / 8 x 12 inches). Mix 1 tbsp sugar with the ground cloves, cinnamon, and chopped almonds. Sprinkle over the dough, then spread the cooled plum compote evenly on top. Roll the dough up lengthwise and cut into 6 slices.

  4. First baking method (on baking tray):
    Place the slices on a baking tray lined with parchment paper. Cover and let rise again for 20 minutes. Brush with the remaining melted butter. Bake in a preheated oven at 200°C (top and bottom heat) for approx. 25 minutes.

  5. Alternative method (in baking dish):
    Roll the dough out again to about 5 mm thick. Spread with the cooled plum filling, roll up lengthwise, and cut into 2–3 cm thick slices. Place the rolls into a greased baking dish. Put the dish into a cold oven, let the rolls rise at 50°C (fan) for 15 minutes, then bake at 150°C for 40–45 minutes until golden brown.

  6. Finish:
    Remove from the oven and let cool. Mix sugar with a little water to make a glaze and drizzle over the cooled rolls.
