Potato Balls with Mushroom Sauce

Preparation:

  1. Boil the potatoes:
    Wash the potatoes and boil them in salted water for 20–25 minutes. Drain, let cool slightly, and peel.

  2. Mash and mix:
    Mash the potatoes into a smooth purée. In a bowl, combine the mashed potatoes with the egg, breadcrumbs, Parmesan, salt, and pepper. Mix gently until well combined.

  3. Form the balls:
    Shape the mixture into small balls, about 40–50 g each.

  4. Make the mushroom sauce:
    In a pan, heat the olive oil and sauté the chopped garlic for 1 minute. Add the sliced mushrooms and cook for 5–7 minutes.

  5. Add the cream:
    Pour in the cream, lower the heat, and cook for another 5 minutes until the sauce thickens.

  6. Add the potato balls:
    Gently place the potato balls into the sauce. Cook over low heat for about 10 minutes, turning them carefully to coat with the sauce.

  7. Season and serve:
    Adjust salt and pepper to taste. Garnish with chopped parsley and serve hot.
