Preheat the Oven
- Preheat your oven to 350 degrees.
Lemon Filling
- In a medium saucepan, whisk together 1 cup of white sugar, 2 tablespoons of all-purpose flour, 3 tablespoons of cornstarch, and 1/4 teaspoon of salt.
- Stir in 1 1/2 cups of water, the juice and zest of 2 lemons, and 2 tablespoons of butter.
- Cook the mixture over medium-high heat, stirring frequently until it comes to a boil.
- Place 4 beaten egg yolks in a small bowl and gradually whisk in 1/2 cup of the hot sugar mixture.
- Whisk the egg yolk mixture back into the remaining sugar mixture. Bring it to a boil, continuing to stir constantly until the mixture thickens. Remove it from heat.
- Pour the lemon filling into the baked pastry shell.
Meringue
- In a large glass or metal bowl, whip 4 egg whites until they become foamy.
- Gradually add 6 tablespoons of white sugar while continuing to whip until stiff peaks form.
- Spread the meringue over the pie, making sure to seal the edges at the crust.
- Bake in the preheated oven for 10 minutes, or until the meringue is a beautiful golden brown.
