Step 1: Prepare the Peanut Butter Dough
- In a medium bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Cover and refrigerate for 20–30 minutes to firm up.
Step 2: Prepare the Brownie Dough
- Melt the butter and let it cool slightly.
- Whisk the melted butter with sugar until glossy.
- Add the egg and vanilla extract, mixing until thick and smooth.
- Sift in cocoa powder, flour, salt, and baking powder.
- Stir just until combined. Fold in chocolate chips if using.
Step 3: Assemble the Cookies
- Preheat oven to 175°C (350°F) and line baking sheets with parchment paper.
- Scoop 1 tablespoon of peanut butter dough and 1 tablespoon of brownie dough.
- Gently press them together and roll lightly into a ball, leaving a marbled look.
- Place dough balls 5 cm apart on the baking sheet.
Step 4: Bake
- Bake for 10–12 minutes, until edges are set but centers are soft.
- Do not overbake—these cookies firm up as they cool.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
