Ingredients
For the steak:

600 g steak (e.g. ribeye, sirloin, or beef tenderloin — about 4 slices)

2 tbsp olive oil 
- 
2 tbsp butter 
- 
Salt and freshly ground black pepper to taste 
For the pepper sauce:
- 
2 tbsp butter 
- 
1 shallot, finely chopped 
- 
2 garlic cloves, finely chopped 
- 
100 ml cognac or brandy (can be substituted with broth) 
- 
200 ml beef or chicken broth 
- 
300 ml cream 
- 
2 tbsp coarsely ground black pepper (or green peppercorns) 
- 
1 tbsp Dijon mustard 
- 
1 tsp soy sauce 
- 
Salt to taste 
- 
2 tbsp fresh parsley, chopped 
For the potato wedges:
- 
800 g potatoes (waxy variety like Almond or similar) 
- 
3 tbsp olive oil 
- 
2 tsp paprika 
- 
1 tsp garlic powder 
- 
1 tsp dried thyme or rosemary 
- 
Salt and freshly ground black pepper to taste 
For serving:
- 
200 g vegetables (e.g. salad, tomatoes, or green beans)
