Preparation:
- 
Preheat the oven: 
 Preheat your oven to 200°C (top and bottom heat).
- 
Prepare the potatoes: 
 Wash the potatoes thoroughly and halve or quarter them depending on their size. You can leave them whole if they are very small.
- 
Make the garlic butter mixture: 
 In a small bowl, combine melted butter with olive oil, chopped garlic, salt, pepper, paprika powder, and herbs (thyme or rosemary).
- 
Marinate the potatoes: 
 Place the potatoes in a large bowl and pour the garlic butter mixture over them. Toss well so the potatoes are evenly coated.
- 
Bake: 
 Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 30–40 minutes until golden and crispy. Turn the potatoes halfway through baking to brown evenly.
- 
Serve: 
 Remove the potatoes from the oven and sprinkle with chopped fresh parsley. Optionally, add some coarse sea salt on top.
Tip: These oven potatoes go perfectly as a side dish for meat, fish, or simply as a snack with a dip like sour cream.
