Ingredients
For the Cookie Dough
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- ½ teaspoon vanilla extract
- 1⅓ cups all-purpose flour
- 2 tablespoons cornstarch (or custard powder for extra richness)
- ¼ teaspoon salt (use slightly less if using table salt)
For Rolling & Filling
- Granulated sugar, for rolling
- About ½ cup raspberry jam (or any jam you love: strawberry, apricot, blackberry)
