Instructions:
1️⃣ In a large bowl, mix oats, baking powder, salt, and the seed mixture (if using) well.
2️⃣ Add eggs and quark (and carrot or olive oil, if using), then mix everything with a hand mixer until smooth.
3️⃣ Knead the dough once more by hand, shape into a loaf, and place it on a baking tray lined with parchment paper.
4️⃣ Optional: Sprinkle with some oats on top.
5️⃣ Bake in a preheated convection oven at 180°C (350°F) for about 1 hour, until the flatbread is golden brown.
6️⃣ Let cool completely before slicing.
