Instructions
Oatmeal Cookies
-
Preheat the oven to 175 °C (350 °F) with fan.
-
Melt the butter in a pan. Remove from heat. Stir in the sugar, then add oats and the egg. Mix the flour, baking powder, vanilla sugar, and salt, then stir into the pan mixture.
-
Line 2 baking trays with parchment paper. Place small dollops of dough on the trays using 2 spoons. Each tray can hold about 10 pieces, as the dough spreads. Press each piece lightly and bake for about 10 minutes or until golden and crispy. Let cool.
Buttercream
-
Beat the butter until golden and fluffy, add powdered sugar, egg yolk, and vanilla sugar, then beat again. While beating, gradually add the whipping cream.
-
Put the buttercream into a piping bag with a star nozzle.
-
Spread the buttercream on half of the oatmeal cookies and sandwich them with the remaining cookies. Chill in the fridge while melting the chocolate.
Chocolate coating
-
Melt the chocolate in a bowl over a double boiler.
-
Pour the melted chocolate into a glass. Dip half of the sandwich cookies into the chocolate and return to the fridge until the chocolate hardens.
Enjoy your delicious treat!
