Oatmeal Cookies with Buttercream and Chocolate

Instructions

Oatmeal Cookies

  1. Preheat the oven to 175 °C (350 °F) with fan.

  2. Melt the butter in a pan. Remove from heat. Stir in the sugar, then add oats and the egg. Mix the flour, baking powder, vanilla sugar, and salt, then stir into the pan mixture.

  3. Line 2 baking trays with parchment paper. Place small dollops of dough on the trays using 2 spoons. Each tray can hold about 10 pieces, as the dough spreads. Press each piece lightly and bake for about 10 minutes or until golden and crispy. Let cool.

Buttercream

  1. Beat the butter until golden and fluffy, add powdered sugar, egg yolk, and vanilla sugar, then beat again. While beating, gradually add the whipping cream.

  2. Put the buttercream into a piping bag with a star nozzle.

  3. Spread the buttercream on half of the oatmeal cookies and sandwich them with the remaining cookies. Chill in the fridge while melting the chocolate.

Chocolate coating

  1. Melt the chocolate in a bowl over a double boiler.

  2. Pour the melted chocolate into a glass. Dip half of the sandwich cookies into the chocolate and return to the fridge until the chocolate hardens.
