Grind oats in a blender until fine.

Add wet ingredients: Combine milk, grated carrot, rinsed apricots and raisins, chopped apple, cinnamon, eggs, sweetener, and vanilla. Blend until well mixed.

Mix dry ingredients: In a large bowl, mix ground oats with baking soda.

Combine: Pour the wet mixture into the dry mixture and stir to combine.

Bake: Grease an 18 cm baking dish, pour in the mixture, and spread evenly. Bake for 45–50 minutes or until golden and a toothpick comes out clean.

Cool and serve: Let cool slightly before slicing. Serve warm or at room temperature.
