Oatmeal, Apple & Carrot Bake – No Sugar, No Flour!  I don’t eat any sugar at all – and I don’t miss it!

Instructions

  1. Preheat oven to 180°C (350°F).

  2. Grind oats in a blender until fine.

  3. Add wet ingredients: Combine milk, grated carrot, rinsed apricots and raisins, chopped apple, cinnamon, eggs, sweetener, and vanilla. Blend until well mixed.

  4. Mix dry ingredients: In a large bowl, mix ground oats with baking soda.

  5. Combine: Pour the wet mixture into the dry mixture and stir to combine.

  6. Bake: Grease an 18 cm baking dish, pour in the mixture, and spread evenly. Bake for 45–50 minutes or until golden and a toothpick comes out clean.

  7. Cool and serve: Let cool slightly before slicing. Serve warm or at room temperature.
