Instructions:

Grate the carrots and apples (you can leave the peel on if you prefer), then set aside.

In a large bowl, beat the eggs and add the yogurt, mixing well.

Add the rolled oats and stir to combine.

Add the honey or syrup and mix again.

Add the grated carrots and apples, stirring until the mixture is smooth and well combined.

Pour the batter into a 22 cm (8–9 inch) baking pan lined with parchment paper.

Bake at 180°C (350°F) for 40–45 minutes, until the cake is golden and cooked through (check with a toothpick).
