Preheat the oven to 180°C (360°F).

Place the oats in a bowl and pour the hot water over them. Let soak for 5 minutes.

In a separate bowl, beat the eggs with the erythritol or stevia until the mixture is light and frothy.

Add the vanilla extract and yogurt, mixing well.

Stir in the melted, cooled butter.

Add the soaked oats and mix to combine.

Gently fold in the apple pieces and blueberries, being careful not to mash them.

Add the baking powder and stir until you have a smooth, even batter.

Grease the loaf pan with butter or line it with baking paper.

Pour the batter into the prepared pan and smooth the top with a spatula.

Bake for about 50 minutes, or until a toothpick inserted in the center comes out clean.

Remove the loaf cake from the oven and let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Serving Suggestion
Once cooled, slice and serve. This cake keeps well for several days in an airtight container and can also be frozen for later.
