Directions:
1. Grate potatoes using a coarse grater.
2. Place grated potatoes in a clean tea towel and squeeze out as much liquid as possible.
3. In a large bowl combine grated potatoes and onion.
4. Add egg, plain flour, salt, and pepper.
5. Mix well until everything is evenly coated.
6. Heat oil or butter in a frying pan over medium heat.
7. Spoon heaped tablespoons of mixture into the pan.
8. Flatten slightly with a spatula.
9. Cook for 3 to 4 minutes each side until golden and crispy.
10. Transfer cooked pancakes to paper towel to remove excess oil.
To serve:
