My Mother’s Piled-Up Fried Potatoes

Preparation:

 

 


Peel and wash the potatoes. Slice them thinly and add salt to taste.

Pour the oil into a deep frying pan. When it’s hot but not smoking, add the potato slices one by one. Fry them over high heat until they’re golden. Then lower the heat and cook them gently so they’re well done on the inside and tender.

Drain the potatoes well to remove excess oil and serve.
