- Combine meatloaf ingredients: In a large mixing bowl, combine the ground beef, chopped onion, chopped bell pepper, Worcestershire sauce, chopped fresh parsley, Dijon mustard, ¼ cup BBQ sauce, bread crumbs, Italian seasoning, garlic powder, large egg, salt, and pepper to taste.
- Knead the mixture: Use your hands to knead the mixture until all the ingredients are evenly combined.
- Portion into muffin tin: Divide the meatloaf mixture evenly into the 10 prepared muffin cups.
- Prepare the glaze: In a small bowl, stir together the ¼ cup BBQ sauce, ketchup, and honey until well combined.
- Glaze the meatloaves: Top each mini meatloaf muffin with the prepared glaze, spreading it evenly over the surface.
- Bake: Bake in the preheated oven for 25 minutes, or until the mini meatloaves are browned and cooked completely through. The internal temperature should reach 160°F (71°C).
- Cool and serve: Remove the muffin tin from the oven and let the mini meatloaf muffins cool slightly before serving. Serve warm and enjoy!
