Preparation
- 
Make the shortcrust pastry: 
 Roll out about 1/3 of the dough and cut it using the ring of a springform pan.
- 
Line the pan: 
 Use the larger portion of dough to line a greased springform pan, pressing it up the sides to form a crust.
 If needed, thicken the applesauce with 2 tablespoons of cornstarch, then spread it over the dough.
- 
Top the cake: 
 Cover with the rolled-out dough circle. Alternatively, cut the dough into strips and lay them over the top in a lattice pattern.
- 
Bake: 
 Bake at medium heat (approx. 175 °C / 350 °F) for about 50 minutes.
- 
Finish: 
 Let the cake cool, then cover with a powdered sugar glaze.
