My boyfriend requested I make this and I had never even heard of it! Tracked down this recipe and gave it a try

Instructions:

  1. Prepare the Chicken:
    • Preheat oven to 375°F (190°C).
    • Season chicken breasts with salt and pepper.
    • Heat olive oil in an oven-safe skillet over medium-high heat.
    • Sear chicken breasts on both sides until golden brown.
    • Transfer skillet to preheated oven and bake for 15-20 minutes until chicken is cooked through (internal temperature of 165°F or 74°C). Remove and set aside.
  2. Make the Cheese Sauce:
    • In the same skillet, melt butter over medium heat.
    • Add sliced mushrooms and sauté until golden brown and softened.
    • Stir in minced garlic and cook for an additional minute.
  3. Create the Creamy Sauce:
    • Pour heavy cream into the skillet and bring to a gentle simmer.
    • Gradually add shredded cheddar cheese, stirring constantly until cheese is melted and sauce is smooth.
  4. Season and Finish:
    • Season the sauce with dried thyme, salt, and pepper to taste.
    • Allow the sauce to simmer for a few minutes to blend the flavors and thicken slightly.
  5. Combine and Bake:
    • Return the cooked chicken breasts to the skillet, nestling them into the creamy cheese sauce.
    • Spoon some of the mushroom sauce over each chicken breast.
  6. Final Bake:
    • Place the skillet back in the oven and bake for an additional 10-15 minutes until the chicken is heated through and the flavors have melded.
  7. Serve and Enjoy!
    • Let the Smothered Cheesy Baked Chicken with Mushrooms rest for a minute before serving.
    • Plate each chicken breast with a generous spoonful of the cheesy mushroom sauce.
    • Pair with steamed vegetables or a crisp salad for a complete low-carb meal.
