Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, mix wet ingredients: eggs, applesauce, vegetable oil, vanilla, and grated carrots.
- Combine wet and dry ingredients gently until just mixed. Do not overmix.
- Fold in coconut, nuts, and raisins or pineapple.
- Spoon batter evenly into muffin cups, filling about ¾ full.
- Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
