👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, whisk together dry ingredients: flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix wet ingredients: eggs, applesauce, vegetable oil, vanilla, and grated carrots.
  4. Combine wet and dry ingredients gently until just mixed. Do not overmix.
  5. Fold in coconut, nuts, and raisins or pineapple.
  6. Spoon batter evenly into muffin cups, filling about ¾ full.
  7. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.
