Meatloaf With A Tomato Beef Sauce

Instructions

 

Step 1: Prepare the Meatloaf

Add all the ingredients for the meatloaf in the large bowl. Mix using either your hands or a spatula and then gently but thoroughly combine everything—overmixing the meatloaf can lead to a dense meatloaf.

Step 2: Shape and Bake

Shape the mixture into a loaf and either place it in a baking dish or on a handmade parchment-lined baking sheet. Bake for 1 hour at 350°F or 175°C.

Step 3: Make the Sauce

Prepare the sauce while the meatloaf bakes. In a microwaveable measuring cup, combine and whisk the ketchup and the cornstarch, then add the beef consomme, basil, and hot sauce, optional. For 3 minutes, on high heat, microwave and stir at the halfway point. The sauce should be warm and slightly thick.

Step 4: Glaze the Meatloaf

Once the meatloaf has baked for 1 hour, pour the sauce on it. Bake for 30 minutes, uncovered, for the sauce to set.

Step 5: Rest and Serve

Let the loaf sit for 10 minutes and then slice. Enjoy the meatloaf warm with mashed potatoes and green beans or roasted veggies.

Make-Ahead & Storage Tips

  • For your Prep Ahead work, Mix and shape meatloaf and then cover it, it will rest in the fridge, or you can it leave it uncooked and refrigerate it for up to a day!
  • For Leftovers you will want to use an airtight container, it will keep for 4 days and can be refrigerated.
  • For Frozen Leftovers you will want to slice them, wrap them individually, it will keep your meatloaf frozen and you can reheat it in the oven or microwave with a splash of broth.
  • For a meatloaf you want to not overmix, blend it just until you reach your combined goal!
  • For tasty meatloaf you want to add moisture using lean meat but not the extra-lean cut, some fat will really help the meatloaf to stay juicy.
  • For extra flavor, try using part of the ketchup with barbecue sauce for a great and smoky twist.
  • If you don’t have the beef consomme you can use beef broth with a splash of Worcestershire sauce as a great replacement.
